Couples in for ‘heavenly’ Valentine dinner at Impressions

Love is definitely in the air at Impressions restaurant as it treats couples this year with an exquisite four-course dinner menu to celebrate the season of hearts, as well as their relationship. 

The Heavenly Valentine Surprise dinner starts with the light and frothy amuse bouche and mousse of scallops and celery crumble that’s served with orange-scented tulle and basil oil.

For the appetizer, it’s twice-cooked duck liver, arugula, smoked beet purée, and red onion marmalade, followed by a creamy broth of mussels and leeks, with edamame and Akegai clam meat meunière and micro salad.

The entrée is a choice of slow-roasted US Angus prime rib (200 grams) with mashed potatoes, ratatouille and yorkshire pudding veal jus; roasted Chilean sea bass with leeks and oyster risotto, and sautéed mushroom chive cream sauce; or Minute Marinated French Duck Breast with potato cooked on duck fat and thyme, baby carrots, and duck jus.

After the main course, expect a surprise from the Impressions team as it brings in the Mignardises, which are specially prepared miniature pastries and sweets.

For dessert, it’s mixed berries and dark chocolate, berry chiboust, quenelle of citrus-scented dark chocolate ganache, duo of strawberry (Sponge and Coulis), 70-percent Guanaja Valrhona gellato, chocolate soil, and meringue.

The menu was specially prepared by executive chef Cyrille Soenen, the only resident Maitres de Cuisiniers de France (Master Chef of France) in the Philippines.
